Easy, Gluten-Free Pancakes

Have you tried gluten-free pancakes that taste like cardboard? Yep…Me too! As with all the recipes on my site, I only share ones that I’ve tried and LOVE! We make these at least once a week, and you don’t even know they are gluten free! We usually use half almond flour and half gluten-free oat flour. Give them a try and tell us what you think in the comments below! Makes about six, average-sized pancakes.

Ingredients

  • 1 1/8 cups almond and/or gluten-free oat flour

  • 3/4 teaspoon xanthan gum

  • 2 1/4 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1 cup almond milk or milk

  • 3 eggs

  • 3 tablespoons olive or avocado oil

  • Blueberries

Directions

  1. Mix dry ingredients and wet ingredients in separate bowls.

  2. Combine ingredients.

  3. Let batter sit for 10 minutes.  

  4. Fold in blueberries.

  5. Fry them up in a pan.

  6. Top with your favorite berries.

  7. Enjoy!
